On le connait pour son flan \u00e0 la vanille. Un d\u00e9lice qui lui colle peut-\u00eatre un peu trop aux mains. Comme un film culte ou un hit. Mais Quentin Lechat ne le renie pas. Il prom\u00e8ne simplement son imaginaire autour d\u2019autres incontournables de la p\u00e2tisserie chocolaterie. <\/p>\n\n\n\n

L\u2019oeuf de P\u00e2ques ? Et bien oui justement. \u00ab Il est difficile de proposer quelque chose d\u2019original  \u00bb reconna\u00eet le Chef p\u00e2tissier du Royal Monceau -Raffles Paris. \u00abAlors j\u2019ai proc\u00e9d\u00e9 par association d\u2019id\u00e9es \u00bb. R\u00e9sultat : un oeuf de P\u00e2ques qui \u00e9voque l\u2019ile \u00e9ponyme. Non, il n\u2019y est jamais all\u00e9 bien que l\u2019aventure le tente. <\/p>\n\n\n\n

Visuellement la pi\u00e8ce est bluffante. Presque un trompe l\u2019\u0153il. On croit voir une sculpture de pierre. L\u2019astuce du chocolatier : le mouchet\u00e9. En bref une technique inspir\u00e9e du Pav\u00e9 qui lui a value le Grand Prix de la P\u00e2tisserie de Paris. \u00abJ\u2019ai travaill\u00e9 autour de trois teintes pour un oeuf en trois parties  \u00bb pr\u00e9cise Quentin Lechat.<\/p>\n\n\n\n

Et concr\u00e8tement ? L\u2019oeuf Moa\u00ef de P\u00e2ques est une variation autour du chocolat noir et du chocolat au lait. La p\u00e2tisserie est garnie d\u2019un onctueux pralin\u00e9 pistache \u00e0 la fleur de sel et parsem\u00e9e de pistache caram\u00e9lis\u00e9 afin d\u2019apporter une touche de croquant. <\/p>\n\n\n\n

Par ailleurs Quentin Lechat propose un tea time de P\u00e2ques. \u00c0 savoir : un dessert \u00e0 l\u2019assiette, des p\u00e2tisseries de vitrine, des pi\u00e8ces cocktails, des glaces, des confiseries ou encore des g\u00e2teaux de voyage.<\/p>\n\n\n\n
