Dans ce classement deux nouvelles tables d\u00e9crochent trois \u00e9toiles et huit nouveaux restaurants en obtiennent deux. Par ailleurs le guide distingue une nouvelle g\u00e9n\u00e9ration de restaurateurs primo \u00e9toil\u00e9 \u00e0 moins de 40 ans.<\/strong> <strong>Focus que quelques p\u00e9pites de la gastronomie fran\u00e7aise.<\/strong><\/p>\n\n\n\n<p>\u00c0 Tours, le 18 mars, la c\u00e9r\u00e9monie de remise des \u00e9toiles a r\u00e9uni 700 chefs et distingu\u00e9 62 \u00e9tablissements.<\/p>\n\n\n\n<p>Depuis 105 ans, l&rsquo;attribution des \u00e9toiles r\u00e9pond \u00e0 cinq crit\u00e8res. La qualit\u00e9, la ma\u00eetrise technique, l&rsquo;harmonie des plats, la personnalit\u00e9 du Chef et la r\u00e9gularit\u00e9. Les inspecteurs visitent anonymement les lieux et r\u00e8glent l&rsquo;addition. Ils font, en moyenne chaque ann\u00e9e, 240 essais de table et passent 130 nuits dans les h\u00f4tels. Les \u00e9tablissements sont en moyenne visit\u00e9s tous les dix-huit mois. <\/p>\n\n\n\n<p>Sur son site le guide Michelin note qu&rsquo;au total, la s\u00e9lection de restaurants 2024 recommande 639 tables \u00e9toil\u00e9es en France. Le chef Fabien Ferr\u00e9, 35 ans, reprend les cuisines et la restauration du Castellet (Var) au printemps 2023 et d\u00e9croche 3 \u00e9toiles. Directement. L&rsquo;\u00e9tablissement avait perdu ses \u00e9toiles au d\u00e9part du Chef Christophe Baqui\u00e9 aux c\u00f4t\u00e9s duquel Fabien Ferr\u00e9 a travaill\u00e9 pendant 10 ans. Le chef aux racines bourguignonnes privil\u00e9gie aujourd&rsquo;hui la M\u00e9diterran\u00e9e et la Provence. Ainsi la mer, les poissons frais, les fruits et les l\u00e9gumes sont \u00e0 l&rsquo;honneur. La sauce est reine. Il est marqu\u00e9 par sa Bretagne natale, le Japon et \u00e9galement  la Turquie o\u00f9 il a d\u00e9couvert la cuisson \u00e0 la chaux. Le chef est un grand technicien. Prot\u00e9g\u00e9 de Jo\u00ebl Robuchon, pass\u00e9 aussi par Troisgros \u00e0 Roanne, le chef Christophe Cussac rejoint l&rsquo;H\u00f4tel M\u00e9tropole Monte Carlo en 2004. Il officie par ailleurs \u00e0 l\u2019h\u00f4tel La Ponche \u00e0 Saint-Tropez. Sa cuisine ? \u00ab\u00a0Des viandes et poissons cuits au Konro, des \u00e9pices et tubercules mari\u00e9s dans une harmonie surprenante, des sauces color\u00e9es et l\u00e9g\u00e8res, des acidit\u00e9s provocantes\u2026 Il travaille \u00e9galement les fermentations lactiques.
