Un dessert onirique. La b\u00fbche \u00ab\u00a0Hesp\u00e9rid\u00e9e\u00ab\u00a0<\/strong> ou Dancing Leaves est un monde de l\u00e9g\u00e8ret\u00e9, de d\u00e9licatesse sign\u00e9e Anne Corube. La Cheffe c\u00e9l\u00e8bre la nature avec des agrumes et de la vanille. Sur une base croustillante de vanille, le biscuit, \u00e0 l\u2019huile de chanvre et \u00e0 l\u2019huile d\u2019olive, est en effet relev\u00e9 par la fra\u00eecheur de la pulpe de citron. Ensuite le cheesecake au lait cru se marie \u00e0 la p\u00e2te de citron brul\u00e9.<\/p>\n\n\n\n

Une nuit de No\u00ebl glaciale. Dans le ciel et sur les sapins, des \u00e9toiles. Sur la b\u00fbche du chef p\u00e2tissier Nicolas Guercio aussi. Et m\u00eame essentiellement. Son dessert de r\u00e9veillon est en effet en forme d\u2019\u00e9toile \u00e0 six branches. Il revisite par ailleurs le traditionnel Mont-Blanc avec un biscuit et une cr\u00e8me aux marrons, un confit de cassis au poivre de Timut et une meringue. L’ensemble est recouvert de chocolat blanc. Mais la b\u00fbche cache aussi une surprise : une bo\u00eete \u00e0 musique de No\u00ebl jouant une m\u00e9lodie festive faisant virevolter les \u00e9toiles du flocon faits de sucre candi, de chocolat blanc et de p\u00e2te \u00e0 sucre.<\/p>\n\n\n\n
